What is eaten and drunk here, from bolo do caco to Madeira wine, by way of the fruit, the cane-honey cakes and the poncha.

  • Bolo do caco

A round bread baked on the "caco", a scorching basalt stone, rather than in an oven: born in Porto Santo to use up leftover dough, it owes its soft crumb to sweet potato and its crisp crust to the stone. Served warm with garlic-and-parsley butter, alongside espetada or as a "prego" (steak sandwich) — everywhere on the island.

  • Espetada (beef skewer on bay laurel)

Chunks of beef seasoned with garlic and bay leaf, charcoal-grilled on a bay-laurel stick — today often a metal skewer. Once reserved for religious feasts and pilgrimages because of the price of beef, it is eaten with fried cornmeal and, at festivals, with wine mixed with laranjada.

🗓️ All year; served at every summer arraial

  • Black scabbardfish fillet

The island's emblematic fish, caught in deep water by the fishermen of Câmara de Lobos for generations: tender, delicate flesh, traditionally breaded and fried, often served with Madeira banana or passion fruit.

Madeira wine8

Four noble grapes, an ever-present Tinta Negra, two ways of ageing: what to know before you raise a glass.

  • History in liquid form

Exported 25 years after settlement began; toast of 4 July 1776

Records show exports within the first quarter-century of settlement. Madeira wine was chosen to celebrate the independence of the United States, Shakespeare mentions it in his plays, and George Washington, Thomas Jefferson and Winston Churchill were among its admirers; six hundred years of internationalisation.

  • The vineyard

~500 ha, from sea level to 700 m, on terraced "poios"

One of the few regions in the world producing mountain wines: hand-planted plots held by stone walls on very steep slopes, on Madeira and Porto Santo. The largest wine-growing area is Estreito de Câmara de Lobos, from the coast to Jardim da Serra above 600 m; between São Vicente and Seixal the trellised vines come down to within metres of the sea.

  • Appellations

PDO Madeira, PDO Madeirense, PGI Terras Madeirenses

The fortified "Madeira" and the still wines "Madeirense" (protected designations) and "Terras Madeirenses" (geographical indication) are certified by the Madeira Wine, Embroidery and Handicraft Institute, which also guarantees embroidery and rum.
